The Mill has been pouring coffee in Lincoln since 1975 β before craft coffee was a thing, before the Haymarket was a destination. The family-owned roastery at 800 P Street is the flagship: a cozy, rustic room with a covered porch for people-watching, plants everywhere, and a full wall of books donated by local libraries. Students camp out here for hours; regulars have been coming for decades.
The drinks hold up: small-batch roasted coffee, a serious tea selection, the seasonal lavender latte that has a cult following, and the granita β a blended icy coffee sweet enough for people who donβt like coffee. Pastries, cinnamon rolls, and a small lunch menu (the turkey sandwich and hummus wrap are solid) round it out.
Open 7 a.m. to 10 p.m. daily, which makes it the rare coffeehouse that works for both morning study sessions and evening hangs. There are other Lincoln locations, but the Haymarket original is the one to visit.
