DND Farms raises Dexter cattle — a heritage Irish breed that matures smaller and marbles well — on its farm near Prague, then finishes and sells the beef directly, from package cuts all the way to whole carcasses. Processing happens at the Wahoo Meat Locker, USDA-certified, with carcasses hung about two weeks before cutting.
It’s a straightforward farm-to-table setup: you call in your cutting instructions ahead of the butcher date, pay a deposit to hold your share, and pick up at the locker with coolers in tow. Dexter beef is still a rarity in Nebraska’s direct-beef scene, which makes this one worth knowing about.
